Three two-hour periods a week during the first semester. Domestic Arts d.The hemming and monograming of table linen, the making of fine lingerie and summer dresses. Three two-hour periods a week during the second semester. Domestic Arts e.Drafting and advanced dressmaking, including winter and party dresses. Two three-hour periods a week during the first semester. Domestic Arts f.A continuation of course e. Students fit each other under the supervision of the teacher, and much practice is given in the making of various patterns. Two three-hour periods a week during the second semester. Domestic Arts g.French eyelet. Punch work, Venetian, Macrame, and the various kinds of embroidery are worked in this course. Three two-hour periods a week during the first semester. Domestic Arts h.A continuation of course g and the making of the graduating dress. Three two-hour periods a week during the second semester. Domestic Science. Domestic Science a (Home Sanitation).A study of household bacteriology, surrounding of dwellings, sewerage, ventilation, disposal of waste, use of antiseptics, etc. Special emphasis is laid upon the relation of the individual to the community, and the prevention and spread of disease. Three hours per week the first semester. WEBER ACADEMY PAGE 47 Domestic Science b (Personal Hygiene).A study of the care of the human body, personal cleanliness, clothing, care of the eyesight, hearing, etc. Three hours a week the second semester. Domestic Science c and d (Foods).A study of the five food principles, their relation to the human body, and the effect of different degrees of heat upon their nutritive value and digestibility. Instruction is given in the sources, manufacture, marketing and care of food stuffs. Laboratory work consists of practice in making soups, biscuits, muffins, bread, simple desserts, the best methods of cooking different cuts of meat, etc., table service, duties of a waitress and hostess and the serving of a luncheon. Three hours class room work and two laboratory periods per week throughout the year. Domestic Science e and f (Advanced Cooking). Fruit work in stewing, steaming, preserving, making jellies, pickles, catsup, etc., is given during the first eight weeks; advanced cooking in desserts, ices, entrees, salads, etc., during the remainder of the year. Students plan a menu, do the marketing, prepare and serve a luncheon on a given sum of money. Two laboratory periods a week throughout the year. Domestic Science g.a. Household Management.- Systematic house keeping from the view of economy in time, energy, saving health, promoting happiness in the home, also of keeping accounts, and the division of income. Two hours a week, first nine weeks. b. Home Decoration.A study is made of home plans, furnishings, materials and decorations with reject to cost, time and labor. Two hours a week, second nine weeks. |
