Show Baking These courses in baking- include the making of buns, rolls, coffee cakes, stollens, and breads; all types of pastries, such as French, Danish, Swedish, and puff; and cake. The preparation of plain and fancy icings is also taught. Instruction is given in yeast goods and flour analysis, which includes absorption, fermentation, and tests. All students in foods classes are required to pass a physical examination given by the school doctor. Building Trades Related This course is designed to develop an essential knowledge of materials and related subject matter necessary for a complete mastery of the trade; to promote an economic and social appreciation of the building and allied trades in order to develop the highest type of craftsman and citizen; to train for social and economic security. Units covered in the course are: Mechanical drawing and blue print reading, estimating, reading of the steel square, use of building materials and supplies, conditions affecting the worker. The work paralleling this training is given on-the-job by various contractors and skilled craftsmen. Carpentry These courses cover units of work on: Forms, framing, doors and sills, roof framing, timber framing, exterior finish, construction, forming, interior finish, building and setting stairs, concrete work, cabinet work, mill work, building hardware, woods, tools, equipment, power hand tools, blueprint reading, estimating and building codes. Diesel Engines These courses cover all phases of the theory, operation, maintenance and testing of highspeed Diesel engines, their accessories and auxiliaries. This course includes a study of .basic principles and practical work in trouble-shooting, repairing, timing, adjusting, operating and testing various types of Diesel engines, including the fuel injection systems. Laboratory work is arranged to supplement and coordinate with the class work. Engineering 1 and 2. Mechanical Drawing Engineering drawing 1 and 2 give the basic principles that are fundamental to all engineering drafting. Designed to give specific knowledge of processes, materials, and technical principles used in drafting; manipulative skills equal to or exceeding the minimum accepted in industry; practical intelligence sufficient to apply the knowledge and skill in further training or employment in the engineering field. The following units will be considered: Use and care of instruments, geometrical construction, orthographic projections, auxiliary projections, primary and secondary revolutions, isometric and oblique projection, intersections and developments, sections and working drawing. 22 Ground Instruction in Flying Classes covering the requirements for private pilot's license and commercial pilot's license will be organized whenever sufficient numbers are available to form a class. This instruction is in cooperation with the Flying Service Schools. Industrial Electronics Designed to give journeymen electricians practical knowledge of new developments in the field. The course emphasizes fundamentals of industrial electronics for the purpose of qualifying electricians to install, repair, and maintain new types of industrial equipment controlled by electronic devices, such as motors, relays, counting machines, etc. Industrial Electricity Fundamentals of shop and trade practices for apprentices, helpers and journeymen. Includes building trades wiring, armature and coil winding, transformer and switchboard work, electrical machine work, repair of motors, etc. Machine Shop Designed to provide opportunity for journeymen machinists to broaden their skills by becoming familiar with various machine tools, as well as to enable machinist apprentices and helpers to develop competence in the trade. Machine tools available include lathes, planers, shapers, milling machines, drilling machines, turret lathe, etc. Hand tools include chisels, dies, file scrapers, taps, hammers, wrenches, pliers, vise, gauges, micrometers and measuring scales. Meat Market Management This course is especially intended for meat dealers, managers, meat market attendants, meat salesmen, and others interested in meat merchandising and meat market problems. There is no meat cutting in this class. The course includes meat merchandising problems, market management, salesmanship, pricing the merchandise, and cutting tests. The greater part of the course is devoted to calculating, cutting tests, percentages, costs, and selling prices. Principles of Retail Merchandising Several types of modern retail institutions are studied in this course. The various physical factors which make up the modern store, the form of organization and its function, consumer demand and pricing of merchandise, budgeting and control, sales promotion, and a discussion of opportunities offered in the field of merchandising are considered. Painting, Decorating and Paperhanging This course consists of the following: Removing finishes on woodwork, bleaching woodwork, staining woodwork, filling woodwork, shelacking woodwork, varnishing woodwork, rubbing woodwork, marbling woodwork, and 23 |
