Morgan Pioneer History Binds Us 'Together Deep Dark Chocolate Cake Stir together: 2 cups sugar 3/4 cup cocoa powder 1-1/4 teaspoon baking soda 1-1/4 teaspoon baking powder 1 teaspoon salt Beat together: 2 eggs 1/2 cup lard (you can use vegetable oil) 2 teaspoons vanilla extract 1 cup milk Add to dry ingredients and beat two minutes. Stir in one cup boiling water. The batter will be thin. Bake at 350 degrees. 35 to 40 minuts for 9x13 inch pan, or 30 to 35 minutes for 9 inch round pans Let cool in pan for ten minutes. FROSTING: Beat together 6 tablespoons soft butter, 2-3/4 cups powdered sugar, 1 /2 cup cocoa powder, 1 /3 cup hot milk and 1 teaspoon vanilla. Spread on cooked cake. Potato Bread • Simmer 2 small potatoes in 3 cups water until mushy. Mash thoroughly and add enough water to make 3-3/4 cups. • Add one package dry yeast and 3 tablespoons sugar. Let soften and rise. (Grandma used to leave it overnight.) • in large bowl, put 6 cups flour, 3 tablespoons shortening (Grandma used pork lard she made), and 1 tablespoon salt. • Add the yeast /potato mixture and enough more flour to knead into an elastic ball. Cover and let rise 1 hour. • Punch down in bowl, cover and raise 40 minutes. • Punch down, cover and rase 20 minutes. • Divide into two loaves. Let rest 10 minutes. • Shape into loaves and place into greased loaf pans (7-1/2 inches long x 3-1/2 inches wide x 2- 3/4 inches deep). Cover with damp cloth or plastic wrap and let rise until a dimple made in one end of dough with your finger will remain • Preheat oven to 450 degrees, place bread in oven and time for 5 minutes. Turn over to 300 degrees for 20 minutes. Turn out of pan to cool.. Grandma always wrapped a clean dish towel around to cool. I like to butter the top of mine. 'Utt
