Show Roasting Vegetables (Source Intermountain LiVe Well "Cooking Your Weigh to Health") 1. Preheat oven to 400 degrees. 2. Cut about 4 cups of vegetables into size desired, about 1 inch chunks usually works well. Keep In mind that small pieces will cook faster than larger pieces, so cut uniformly. 3. Put veggie into a bowl and toss with 1 Tbsp. of olive oil. Season as you prefer. 4. Spread cut pieces across a baking sheet, being careful not to overcrowd. Put baking sheet in oven and roast for 15-25 minutes or until fork tender. Vegetables like asparagus and squash will cook faster that potatoes or carrots. Best Vegetables To Roast: Potatoes, Sweet potatoes. Onions, Brussels sprouts. Carrots, Bell peppers, Beets, Eggplant, Butternut squash. Asparagus, Squash, Zucchini, Cauliflower, and Broccoli.
