Show Cooking For Two Cheese-Baked Chicken 2 small chicken breasts 1 tablespoon butter or margarine, melted 1/3 cup grated Parmesan cheese 2 tablespoons butter or margarine Dip chicken breasts in the 1 tablespoon melted butter or margarine, then in the Parmesan cheese. Melt remaining 2 tablespoons butter in a shallow pie plate. Place chicken breasts, skin side up, in pie plate. Bake in hot oven (400) about 50 minutes or till chicken is tender. Spoon drippings over chicken once or twice during baking. Cover with foil last 15 minutes if necessary to prevent over browning. Makes 2 servings.
